Use peeled russets, or a non-waxy potato like yukon ( a "drier". Potato curry is a one pot dish made by simmering potatoes in onion tomato masala along with spices & herbs. Tinda and Potatoes curry instructions

  1. Peel off and cut the Potatoes and tinda.
  2. Heat oil and saute the Potatoes and tinda adding salt and turmeric powder.
  3. Remove it and keep aside.
  4. Heat oil and add garlic crushed and onion,saute well.
  5. Add ginger paste and saute well adding salt and turmeric powder.
  6. Add tomato puree and red chilli Powder and mix.
  7. Now add the fried vegetables and saute well.
  8. Add water and boil until it gets soft.
  9. Add garam masala powder and sugar.
  10. Serve it with rice or chapati.
