Ingredients of Phad Thai

  1. It’s 300 grams of Chicken thigh, into strips.
  2. You need 180 grams of Rice noodle, cooked.
  3. Prepare 3/4 cup of Spring onion, sliced diagonally.
  4. You need 100 grams of Bean sprouts.
  5. Prepare 1/3 cup of Rough chopped peanuts, toasted.
  6. Prepare 1/3 cup of Sweet chilli sauce.
  7. Prepare 1 tbsp of Fish suace.
  8. You need 1 1/2 tbsp of Lemon juice.
  9. You need of Zest of 1/2 a lemon.
  10. You need 1 tbsp of Tamarind purée.
  11. Prepare 2 tbsp of Peanut butter.
  12. You need 1 tbsp of Chopped chilli.
  13. It’s 2 of Eggs, whisked.
  14. Prepare 1/2 cup of Mint, chopped.
  15. You need of Peanut oil for cooking.
  16. Prepare to taste of Salt and pepper.

Phad Thai step by step

  1. Throw chilli sauce, tamerind purée, lemon juice and rind, peanut butter and fish sauce into a jar and shake well to combine..
  2. Fry chicken and chilli in wok until lightly browned on high heat..
  3. Add eggs and stir constantly until well scrambled in with chicken..
  4. Lower temp and add sauce, cook for a couple of minutes stirring well..
  5. Throw in noodles, sprouts,mint, spring onions and toasted peanuts- (set aside some onion and mint to garnish)mix well and heat through..
  6. Serve with a slice of lemon- garnish with some mint, spring onion and if you're really brave, some sliced chilli. Yuuuuum!! Serves around 4. Really really good- Enjoy!.
