Ingredients of Phad Thai
- It’s 300 grams of Chicken thigh, into strips.
- You need 180 grams of Rice noodle, cooked.
- Prepare 3/4 cup of Spring onion, sliced diagonally.
- You need 100 grams of Bean sprouts.
- Prepare 1/3 cup of Rough chopped peanuts, toasted.
- Prepare 1/3 cup of Sweet chilli sauce.
- Prepare 1 tbsp of Fish suace.
- You need 1 1/2 tbsp of Lemon juice.
- You need of Zest of 1/2 a lemon.
- You need 1 tbsp of Tamarind purée.
- Prepare 2 tbsp of Peanut butter.
- You need 1 tbsp of Chopped chilli.
- It’s 2 of Eggs, whisked.
- Prepare 1/2 cup of Mint, chopped.
- You need of Peanut oil for cooking.
- Prepare to taste of Salt and pepper.
Phad Thai step by step
- Throw chilli sauce, tamerind purée, lemon juice and rind, peanut butter and fish sauce into a jar and shake well to combine..
- Fry chicken and chilli in wok until lightly browned on high heat..
- Add eggs and stir constantly until well scrambled in with chicken..
- Lower temp and add sauce, cook for a couple of minutes stirring well..
- Throw in noodles, sprouts,mint, spring onions and toasted peanuts- (set aside some onion and mint to garnish)mix well and heat through..
- Serve with a slice of lemon- garnish with some mint, spring onion and if you're really brave, some sliced chilli. Yuuuuum!! Serves around 4. Really really good- Enjoy!.
