  1. Fry onion gently in olive oil. When softened add the courgette. Cook for another 2 mins. Then add rice and toast the rice for a further 2 mins. Add wine and let it evaporate.
  2. Add about 3/4 of the stock and a pinch of salt. Simmer on low for about 10 mins. Add the fish and continue simmering for another 10 minutes or so, adding more stock as needed.
  3. Towards end of cooking time add a knob of butter. Stir and cook until creamy. Serve and enjoy 😀.
