Risotto alla pescatora e zucchine step by step
- Fry onion gently in olive oil. When softened add the courgette. Cook for another 2 mins. Then add rice and toast the rice for a further 2 mins. Add wine and let it evaporate.
- Add about 3/4 of the stock and a pinch of salt. Simmer on low for about 10 mins. Add the fish and continue simmering for another 10 minutes or so, adding more stock as needed.
- Towards end of cooking time add a knob of butter. Stir and cook until creamy. Serve and enjoy 😀.
